Domaine d’Aupilhac is a family-run estate in Montpeyroux, Languedoc. The Fadat family has farmed the land since the 19th century, though the vineyards themselves trace back even further—to Roman times.

Fadat’s commitment to organic and biodynamic farming—certified since 2014—reflects his belief that vineyard work shapes wine quality more than cellar techniques. Today, he and his wife Désirée continue to craft expressive wines that honor the land, combining Mediterranean soul with finesse and aging potential.

Due to the altitude and exposure that slow down the maturation of the grapes, this wine retains a great freshness with aromas of red fruits, spices, and scrubland. A model of balance and delicacy with a fresh and spicy finish.
